A successful mistake

Yesterday for the first time in what seems like ages, I got down to serious batch-cooking business.

I made protein pancakes (pop them in the toaster and voila), brown rice, quinoa, Jamie Eason’s pumpkin protein bars and quinoa. I also defrosted some ground turkey that I have yet to turn into real food. But I’ll get to that.

Anyway, so after I finished making all of this I had a lightbulb moment. I forgot an ingredient in the protein bars. A sort of key ingredient.

Oat flour. I managed to forget TWO WHOLE CUPS of oat flour. What the?

This might have had something to do with it…

(Hah, kidding. This wine happened a whole 18 hours prior).

Miraculously…they turned out pretty well anyway!

They’re like super moist pumpkin-pie like bars. Only now they’re lower in carbs! Hooray! I did alter Jamie’srecipe a bit though, based on what I had on hand (subbed applesauce for 1 super ripe banana and I had no baking soda!). Pretty big win of a fail if you ask me.

  1. Those pumpkin protein bars sound super good. Maybe I will have to try making them myself! Good to know that they still come out edible if you don’t follow the recipe exactly haha
