Clean Protein-Packed French Toast

This is one of my favourite ways to eat eggs (disguised as something that actually tastes good, obviously). They’re quick, easy, and packed with protein to keep you full!

 

Clean Protein-Packed French Toast

Ingredients

Serves 1

  • 2 slices Ezekiel bread
  • 1 whole egg
  • 2 egg whites
  • cinnamon (to taste– I use around 1 tsp)

Directions

  1. Heat a non-stick skillet at medium-high heat. Spray with non-stick spray (I use EVOO in a food-grade spray bottle).
  2. Mix the egg, egg whites and cinnamon on a small plate.
  3. Warm up the Ezekiel bread in the microwave (I find it absorbs more egg when it is warm and soft).
  4. Dip the bread into egg/cinnamon mixture on both sides, try to absorb all of the egg. If I have any mixture left I pour it right onto the french toast while it cooks and then flip.
  5. Cook until golden brown on each side, about 5 minutes.
  6. Top with fruit, honey, maple syrup, chia jam, whatever you want! I also like to sprinkle with some more cinnamon and xylitol.
