Vanilla Balsamic Fig Jam (on a Protein Pancake!)

Yup it’s a real thing.

I bought a bunch of figs at the Farmer’s Market on Saturday and it was an act of fate when I came home to a FoodBuzz e-mail that was ALL ABOUT FIGS! This recipe is out of control delicious and CLEAN. And if you are striking refined sugar (like me) but need a sweet kick the face (even more like me), this is for you.

Vanilla Balsamic Fig Jam

Makes approximately 3/4 cup


  • 1/2 lb. fresh black figs, chopped. Cut according to how chunky you want your jam.
  • 1/4 cup raw honey (I just so happened to pick up a jar at the Farmer’s Market that same day! See? Fate.)
  • 1 cinnamon stick
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon aged balsamic vinegar
  1. In a small pot over medium-low heat, bring the honey to a simmer.
  2. Add figs, vanilla, balsamic and cinnamon stick to the honey. Simmer for another 15-20 minutes or until figs break down (as shown in pictures).
  3. Remove the cinnamon stick and let cool. I lasted approximately 10 minutes and then dove into anyway. It did thicken up after cooling but was just as good warm!

I topped my egg-white protein pancake with this delightful jam! Let’s throw that pancake recipe out there too!

Egg-White Protein Pancake

Makes 1


  • 1/2 cup oats
  • 1/2 cup liquid egg whites
  • 1 scoop protein powder (I used About Time in Cinnamon Swirl or Vanilla)
  • 1 teaspoon cinnamon (or to taste)
  • Splash unsweetened vanilla almond milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • teeny pinch of salt


  1. Add all ingredients to blender (or if you’re like me, Magic Bullet!) and blend until oats are ground.
  2. Spray a medium sized skillet with non-stick cooking spray.
  3. Add batter to the pan and cover with a pot lid (this saves the day in cooking both sides faster so the batter doesn’t run everywhere). I like one giant pancake šŸ™‚
  4. When the bottom of the pancake looks golden brown, flip and cook for another minute or so.
  5. Noms it out.

Side note: I hate eggs and I promise you can’t taste them šŸ™‚
