I’m Obsessed with Veggie Quinoa Burgers

So first of all, my breakfast this morning was so delicious, I can’t even get over it:

Ezekiel french toast (1 whole egg, 2 whites, cinnamon), sprinkled with cinnamon, xylitol, blueberries and a bit of sugar-free maple syrup. Omg.

 

After breakfast, Lemon and I went for a lovely little stroll. Whenever it’s sunny out, Lemon isn’t happy unless she is out basking in the rays. So! Off we went to the park!

It was lovely. Lemon doesn’t care for the swans or mallards, but for some reason wants to chase the baby geese. And the squirrels, obviously.

A couple weeks back I mentioned how my Mum had made some delicious quinoa burgers after the Ride for Heart. They were so good. I had them again at my parents’  house the following weekend (again so good) and then finally made them myself today! As usual, I didn’t have all of the ingredients and was too impatient to wait until I did, so I improvised! They turned out just as delicious.

My Mum found the original recipe in Chatelaine magazine, but here is the altered version that I did today! I swapped vegetable oil for olive, carrot for red pepper and added some extra egg whites for more protein!

Quinoa-Veggie Burgers

Makes 8-9 patties

Ingredients

  • 1 cup uncooked quinoa (about 4 cups cooked)
  • 2 tsp olive oil
  • 2 cups coarsely grated zucchini
  • 3/4 cup coarsely grated red pepper
  • 1/2 cup diced onion
  • 2 garlic cloves, minced
  • 2 eggs, beaten
  • 2 egg whites
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
Directions
  1. Add quinoa plus 1.5 cups water to a small pot. Bring to a boil, reduce heat and simmer until no water remains (15-20 minutes).
  2. Add all remaining ingredients and mix well.
  3. Form the mixture into patties using a measuring cup; 1 patty is equal to approximately a 1/2 cup of the mixture.
  4. Spray a non-stick pan with cooking spray (olive oil) and cook patties on medium heat until golden brown on each side; approximately 4 minutes per side.
  5. Serve any which way you like! I am using them as a starch on their own right now but they are also delicious as burgers.
