Back to Work & Clean Falafels!

Hi friends!

A couple new things going on with me. First thing is that I will be starting to work again soon! It is part-time and from home for the most part, but it is going to be a lot of fun! I have already started a bit of work on the project, but the ball should really get rolling really soon. I am working with an old co-worker of mine (my old boss!) who also has her own consulting firm. She has recently landed contracts to plan a couple corporate events (one is huge!) and she has invited me on board as her sidekick! I am super excited. Not only is this new and exciting work that I have never really done before (not on this scale anyway), but I am also thrilled to be working with her again. She is easily the best boss I have ever had, and likely one of the best there is. She is really a mentor and more importantly, a friend. We get along wonderfully, she’s even a runner! There will be a bit of out of province travel involved with the projects as well– so that will be fun, too!

In training news, my foot has hurt in like two days! Anywhere! Not even that pesky big toe!! I even did planks and jumping jacks last night with no issues! I am so tempted to jump the gun and just go for a run, but obviously that would come back to bite me in the bum, so I am trying to hold out for a couple more weeks. Or at least one more week…hah. Either way, SO EXCITED. I smell races… ALSO, Since I have a bike now, I am thinking about trying out a duathlon soon. I am a little horrified by the idea of the swimming portion of a triathlon as of right now, so I think I will start with just running and riding. If anyone knows any good duathlon races in Ontario, let me know!

After Josh and I went to Thrive Juice Bar a couple weeks back, we’ve been having cravings for falafels (okay maybe it was just me). That was actually the first time I had ever tried one and it was delicious! Not sure what took me so long. I decided to try making some at home that we can use through the week as a starch! I got the recipe from The Eat Clean Diet website and it was delicious! I modified it a teeny bit, so I will repost here. Sorry, not the prettiest pictures!

 

Easy Clean Falafels

Makes 11-12

Ingredients

  • 1 can of chickpeas
  • 3 cloves of minced garlic
  • 1/2 small onion minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • pinch of paprika
  • pinch of cumin
  • pinch of parsley
  • 2 tbsp flour
  • Optional: Sesame seeds
Directions
  1. Preheat oven to 375°F.
  2. Smash all the chickpeas using a fork or the bottom of a drinking glass. Add all other ingredients and mix well.
  3. Roll into 2″ balls and flatten into patties, sprinkle with sesame seeds if desired.
  4. Using a food grade spray bottle, spritz with olive oil.
  5. Bake on middle rack until golden brown, about 12 minutes.

They’re almost like savoury cookies. Noms.

I love finding new ways to mix up my meals, I’m not a fan of eating the same things day in and day out!
