Clean Slow-Cooker Salsa Chicken

I’ve been pretty hurting on the new recipes lately, so I am happy to finally have a new one to share! One of my favourite non-clean recipes was slow-cooker salsa chicken from It’s so easy, and convenient, and SO TASTY. Although it isn’t the worst thing for you, it’s not the best! I’ve been thinking about a way to clean this up for a while, so today I gave it a whirl!  It actually turned out really well!

Clean Slow-Cooker Salsa Chicken

Serves 2-4


  • 1 lb boneless skinless chicken breast
  • 2 tbsp organic taco seasoning
  • 1 cup fresh (clean) salsa (I used “Wholly Salsa” brand– only $2 at Wal-Mart or The Superstore in the refrigerated veggie section!)
  • 1 cup unsweetened almond milk
  • 1/2 cup nutritional yeast
  • 2 tbsp coconut flour


  1. Remove excess fat from chicken and add to slow-cooker.
  2. Pour the taco seasoning and salsa over the chicken breasts.
  3. Pour the almond milk into a saucepan and bring it to a boil.
  4. Add nutritional yeast and mix in.
  5. Add coconut flour, one tablespoon at a time, and mix well.
  6. Stir until the sauce thickens and then pour over chicken as well.
  7. Cook on low temperature for 5-6 hours (or on high for 3-4).
  8. Mix up before serving– shred chicken if desired.
  9. Serve over brown rice, quinoa, or an ezekiel tortilla!
  10. Top with a dollop of Greek yogurt (and cilantro if you want!)


We opted for spaghetti squash tonight since it was our 5th meal and we’ve cut starch for the day. Tomorrow at lunch, however, this badboy is going on some rice! I would also add a half cup or so of black beans next time. Noms!

Today is our first rest day on the Body Earned program and then tomorrow we are going to attempt our first morning workout. Oh dear, I haven’t seen 6am in MONTHS, hah.
