Update & Pumpkin Spice Muffins!

Hi guys!

Hope everyone had a wonderful weekend!  I had a great time at my personal training course.  Not only did I learn a lot about personal training, I also learned that I can literally talk (or listen to someone else talk) about fitness and nutrition ALL DAY, and never get bored. That is a good sign.  For the most part we just sat and listened to the “pro trainer” talk, but we also got in an awesome workout yesterday.  We did a lot of legs and abs on the Bosu balls, and can I just say that I TOTALLY outworked the two big guys in my class!  At the end of the class after the guys left, even the trainer mentioned that I totally kicked their butts! She said women are usually stronger than the men she sees in terms of ab exercises and weaker in the pushup exercises, but she said my pushups were also awesome. Can’t lie, felt awesome! Thanks Jamie Eason! 🙂  Most of this week I will be studying to get ready for my exam that I am writing rather soon…

Last night my family was craving something sweet so I whipped up these clean Pumpkin Spice Muffins.  I was actually very surprised at how moist and delicious they turned out! Definitely a keeper.  Tastes a lot like the pumpkin loaf my Mum always makes around Halloween!

 

Pumpkin Spice Muffins

Makes 18 small muffins

Ingredients

  • 2 cups oat flour (I used 2 heaping cups of oats, ground in my Magic Bullet)
  • 1/3 cup stevia
  • 1/4 cup raw honey
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 1.5 cups canned pumpkin
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 18 halved pecans (or crushed pecans)

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine all ingredients and mix well.
  3. Spray muffin pan with non-stick cooking spray, or use paper liners.
  4. Using a spoon, fill each muffin liner close to the top.
  5. Add pecans on top (crushed or halved).
  6. Bake for 20-25 minutes and voila!
