Clean Banana Chocolate Chunk Muffins!

Hi guys!

Hope everyone’s week is off to a great start!  I hit up the gym for a legs workout today and left with some super jelly legs which is always nice! Feels like I did something right, hah!

So this past weekend, I got a SWEET new kitchen appliance that I have been dying to try out. I fired it up today and it was awesome.

This was a very generous gift from our friend Scott!  He knew I had been eyeing it and he has some cupcake-maker connections so he hooked us up! Thanks Scott!

I am still on sugar overload from Easter, so rather than making cupcakes, I opted for a delightful clean banana muffin.  This is a new recipe I adapted from my Clean Mixed Berry Muffins, and it was AWESOME.  Even better than the mixed berry for sure. Although they aren’t quite as visually appealing, they taste so legit!

 

Clean Banana Chocolate Chunk Muffins

Makes 18 small muffins

Ingredients

  • 2 cups oat flour (I used 2 heaping cups of oats, ground in my Magic Bullet)
  • 2/3 cup stevia (or xylitol)
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup unsweetened coconut milk (I use Coconut Dream)
  • 2 ripe bananas, mashed
  • 2oz dark chocolate, chopped (I used 72% cocoa)

Directions

  1. Preheat oven to 350°F (or fire up your Babycakes Cupcake Maker!)
  2. In a large bowl, combine all ingredients and mix well.
  3. Spray muffin pan/cupcake maker with non-stick cooking spray, or use paper liners.
  4. Using a spoon, fill each muffin liner close to the top.
  5. Bake for 15-17 minutes and voila! (The cupcake maker took maybe 5-7 minutes per batch, awesome!)

Nutritional Information

Calories: 75, Carbs: 12g, Protein: 2g, Fat: 2g, Fibre: 1g, Sugar: 5g

 

You could easily reduce the sugar (and calories) by using less (or no) chocolate, but who wants that…? Not I! Hah, kidding, plain banana would also be delicious.

Overall the muffins were awesome and if I were to make them in the oven I might do a topping like on the mixed-berry ones, but I don’t see myself using the oven for baked goods anywhere in the foreseeable future…this machine makes it too easy!

If you are interested in picking up a cupcake maker, you can get them at Canadian Tire or on the Babycakes website.  They have a bunch of awesome machines for things like cake pops, donuts, waffles, whoopie pies, all sorts of fun. I can’t wait to try making mini clean pie crusts on it!!

Anyway, off to finally pick up some groceries for the week since we didn’t make it to the market this past weekend!
