Clean Mixed Berry Muffins!

Hi Friends!

Today was my first tempo run, so after my chest and calves workout I ran (literally) out of the gym to hammer out those 8km (2km slow warm-up + 5km race pace + 1km cool-down). I was super prepared and even remembered to charge my Garmin watch this morning so I could track my speed during my run. This was a big deal because Garmin does NOT make it easy to charge your watch– you need 3, that’s right THREE attachments just to charge it up. Three separate pieces. I hunted all over the house looking for piece 3 of 3 and about 20 minutes later I found it! I plugged it, charged it up and was ready to go! Being so prepared, I was pretty surprised when about halfway into my 4th kilometre, my watched dropped out. It was over it. It was tired. I was on my own. I was SO MAD! How can I change my speed based on my distance if I have no idea what speed or distance I am at? So after about 400m of fury, I realized something… I HAVE AN IPHONE! Oh Apple, I owe you huge. I busted out my iPhone, downloaded a running app and VOILA, I was back in business in no time. It was a bit awkward to hold in my hand so I kept it in my pocket for most of the run and ended up running almost a kilometre extra, but the good news was I could see that I ran fast enough and far enough when I was done! Another day saved by my BFF, the iPhone.

After that I had I busy day in the kitchen. For dinner I made Josh and I “Lightened Up Lasagna” created by Janetha over at meals and moves. I was REALLY excited so I didn’t really take any pictures…but here is one of the leftovers!

It was SO GOOD. Delicious. Tasted so legit. This is my new go-to lasagna recipe. I can’t wait to eat it for lunch tomorrow!

I also whipped up some of Jamie Eason’s Lemon Protein Bars. I have made these many times, but this time I modified a bit and they were the best ones yet! I cut the lemon crystals in half, cut the sweetener in half, and added an extra scoop of vanilla protein and 1 cup of frozen wild blueberries. They are so yummy! Here’s a little peek:

And last but not least, I have a recipe of my own to share! I LOVE muffins, especially deliciously fruit-filled muffins. The problem is, most of them are just cupcakes in disguise. These little guys are completely clean and SO TASTY! I hope you will try them out!

 

Clean Mixed Berry Muffins (with Oatmeal Cinnamon ‘Sugar’ Topping)

Makes 12 muffins

 

Ingredients

Muffins

  • 2 cups oat flour (I rarely buy oat flour I usually grind my own oats– I do 2 heaping cups of oats, ground)
  • 2/3 cup xylitol (or stevia)
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups frozen mixed berries

 

Topping

  • 2 tbsp oats
  • 1 tbsp xylitol
  • 1 tsp cinnamon

Directions

1. Preheat oven to 350°F.

2. In a large bowl, combine all ingredients and mix well.

3. In a separate bowl, mix topping ingredients and set aside.

4. Spray muffin pan with non-stick cooking spray, or use paper liners.

5. Using a spoon, fill each muffin liner close to the top.

6. Sprinkle a heaping teaspoon of the topping mixture on each muffin.

5. Bake for 15-17 minutes and voila!

I am a little bit obsessed with these, they’re so fruity and oaty and delightful. Let me know what you guys think! They really versatile too, I have also done them with banana and sugar-free chocolate chips! The possibilities are really endless…

  1. I wish Garmin watches had an ‘off’ button to conserve on energy when not in use. It’s really annoying having to charge it all the time.

    The muffins look so delicious! Do you think it would work with almond flour?

      I totally agree! My boyfriend has the new Nike running watch it seems a bit more practical. Not sure about the muffin flour, it might work better if you make “mixed berry bars” instead of muffins! You could always halve the recipe and give it a shot! Let me know how it goes 🙂

  3. Yum, I might have to make these muffins for my family this weekend (I’ll be at my grandmparents!) They look awesome! Do you think coconut flour would work?

      Everyone will like them! They are non-clean eater approved, hah! 🙂 Not sure about the coconut flour, I’m thinking that might work better as a bar rather than as a muffin…if you try it, let me know how it works out!
