Clean Sweet & Sour Chicken

So this past weekend at the farmer’s market, Josh and I picked up a pineapple.  I was seriously craving pineapple and they were only $1.50 each!  And they were huge!  So we picked one up and today I cracked into it for my post-workout fruit.  It was SOOO tasty I just wanted to eat more.  So I started googling away for a good recipe I could use it in for dinner. Clean Eating magazine pulled through, as always and I came across this recipe on their website!

 

 

I made a couple modifications and also downsized to make half the amount.  Here’s what I did!

 

Clean Sweet & Sour Chicken

Serves 3

 

Ingredients

2 tbsp + 2 tsp low-sodium soy sauce

1 tbsp raw honey

1.5 cloves garlic, minced

1/4 tsp ground ginger (I didn’t have fresh on hand)

1/4 tsp crushed red pepper flakes

3 chicken breasts, cubed

1/2 large red bell pepper

1/2 medium yellow bell pepper

1 small yellow onion, chopped (about 3/4 cup)

1.5 cups fresh pineapple, cut into 1-inch cubes

 

Directions

1.  Cube chicken and place in shallow pan.  In a separate bowl, combine soy sauce, honey, garlic, ginger and pepper flakes, pour evenly over chicken.  Now you are supposed to let the chicken marinate, covered in the fridge, for 30 minutes to 8 hours.  I, of course, had not planned ahead so I cooked it right away.

2.  Heat a large nonstick skillet over medium-high heat. Add chicken and marinade and cook for 3 minutes. Add bell peppers and onion and cook for 5 minutes or until vegetables are slightly tender. Add pineapple and cook for 2 more minutes.

3.  Serve over brown rice.  It also calls for a sprinkle of cilantro on top here, which I would LOVE, but unfortunately I didn’t have any, sad face.

 

 

It was really good! I do wish that I had let it marinate overnight but the 15 minutes seemed to be okay for a last minute thing.  Next time I will try to prepare ahead though!  Definitely much lighter than typical sweet and sour chicken but still hits the spot.  Josh loved it too, and he is my official “good for real, or good for ‘diet’ food?” judge, hah.

I think I want to try cleaning up Josh’s Goan Chicken Curry, it is my absolute favourite.  I will definitely post that if we are successful! SOO TASTY!
