Coconut-Lime Chicken Lettuce Wraps

Another typical LiveFit Day, a chest and calves workout with another run home in the heat. Today was extra hot, I was SO sweaty when I got home!  The racer back tan is definitely in full force, woops.  Another low carb day, can’t wait to eat SO MUCH FRUIT tomorrow! I miss my fruity oatmeal.

The other day I mentioned the coconut-lime chicken that I made so I thought I would recreate it today so I could share it here!  It’s something I made up on a whim last week (after Meg’s post convinced me to try my coconut oil!) and it turned out great, I have made it a few times since.  I don’t always eat it in a  lettuce wrap but I do prefer it, I like the crunch!

Coconut-Lime Chicken Lettuce Wraps

Serves 1



  • 1 chicken breast (approximately 6oz cooked, not sure what that is raw)
  • 1 tbsp coconut flour (I picked mine up at Bulk Barn with this coupon!)
  • 1 tbsp shredded, unsweetened coconut
  • 1 tsp coconut oil
  • Juice of 1/2 lime
  • A few nuts of your choice, crushed (I used cashews)



1. Cut chicken breast into chunks and toss in coconut flour and shredded coconut.

2.  Heat skillet to medium-high heat.  Add coconut oil to pan.

3.  Spread chicken evenly across skillet, browning chicken on each side.

4.  Squeeze the lime juice over the chicken and cook for another 1-2 minutes.

5.  Add to lettuce cups, top with cashews (I also added some shredded carrot for colour) and serve with a side of veggies!


This keeps well in the fridge as well if you decide to batch cook.  You can also stir-fry it with peppers, onions, etc.  So yummy!
